Shrimp Scampi Linguine

Adapted from The Girl Who Ate Everything, Barefoot Contessa


Shrimp Scampi Linguine

  1. 1 tablespoon kosher salt plus 1 teaspoon (used Sea salt)
  2. 3/4 pound linguine
  3. 3 Tbs unsalted butter
  4. 2 1/2 Tbs good olive oil (used extra virgin olive oil)
  5. 1 1/2 Tbs minced garlic (4 cloves)
  6. 2 Tbs Blended chili paste *a MUST if you like it HOT!*
  7. 1 pound large shrimp (about 16 shrimp), peeled and deveined
  8. 1/4 tsp freshly ground black pepper
  9. 1/3 cup chopped fresh parsley leaves
  10. 1/2 lemon, zest grated
  11. 1/4 cup freshly squeezed lemon juice (you can reduce the lemon if you like)
  12. 1/8 tsp chili flakes


Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.


Meanwhile, in another large, heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Sauté for a minute. Add the shrimp, 1 teaspoon of salt, and the pepper and sauté until the shrimp turn pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
